Ingredients
• 6 large yellow onions, sliced
• 4 tbsp butter
• 2 tbsp olive oil
• 1 tsp sugar
• 1/2 tsp salt
• 6 cups beef broth
• 1/2 cup dry white wine
• 2 bay leaves
• 1/4 tsp thyme
• 6 slices French bread
• 1 1/2 cups grated Gruyère cheese
Instructions
1. Melt butter with oil in large pot
2. Add onions, sugar, and salt
3. Cook slowly for 45 minutes until caramelized
4. Add wine and cook 2 minutes
5. Add broth, bay leaves, and thyme
6. Simmer 30 minutes
7. Preheat broiler
8. Ladle soup into oven-safe bowls
9. Top with bread and cheese
10. Broil until cheese is bubbly and golden
