Thai Green Curry

Ingredients
• 2 tbsp green curry paste
• 1 can coconut milk
• 1 lb chicken breast, sliced
• 1 Thai eggplant, cubed
• 1/4 cup bamboo shoots
• 2 kaffir lime leaves
• 1 tbsp fish sauce
• 1 tbsp palm sugar
• Thai basil leaves
• Red chilies for garnish
Instructions
1. Heat 1/3 of coconut milk in wok over medium heat
2. Add curry paste and cook until fragrant
3. Add chicken and cook until done
4. Add remaining coconut milk and bring to boil
5. Add eggplant and bamboo shoots
6. Season with fish sauce and palm sugar
7. Add lime leaves and simmer 5 minutes
8. Garnish with basil and chilies
9. Serve with jasmine rice
