Spaghetti Carbonara

Ingredients
• 1 lb spaghetti
• 6 oz pancetta or guanciale, diced
• 4 large egg yolks
• 1 whole egg
• 1 cup freshly grated Parmigiano-Reggiano
• 1/2 cup freshly grated Pecorino Romano
• Freshly ground black pepper
• Salt for pasta water
Instructions
1. Bring large pot of salted water to boil
2. Cook pancetta in large skillet until crispy
3. Whisk eggs and cheese in large bowl
4. Cook spaghetti according to package directions
5. Reserve 1 cup pasta cooking water
6. Add hot pasta to pancetta pan
7. Remove from heat and quickly toss with egg mixture
8. Add pasta water as needed for creaminess
9. Season with black pepper and serve immediately
