Ingredients
• 1 cup quinoa
• 1 cucumber, diced
• 2 tomatoes, diced
• 1/2 red onion, finely diced
• 1/2 cup kalamata olives
• 1/2 cup crumbled feta cheese
• 1/4 cup olive oil
• 2 lemons, juiced
• 2 cloves garlic, minced
• 1 tsp dried oregano
• Salt and pepper to taste
Instructions
1. Rinse quinoa and cook in 2 cups water
2. Bring to boil, then simmer 15 minutes
3. Let quinoa cool completely
4. Dice cucumber, tomatoes, and onion
5. Whisk together oil, lemon juice, garlic, oregano
6. Combine quinoa with vegetables
7. Add olives and feta cheese
8. Toss with dressing
9. Chill for 30 minutes before serving
10. Adjust seasoning and serve
